Sunday Italian treat for my taste buds!

Yuminessss is floating around today as I discovered the recipe to the kinda eggplant that my taste buds had been craving for since long. It came out sooooo goood that I couldn't believe myself. And not to forget the great pasta(organic mix pasta from Sprouts, bless Sprouts!) of yesterdays, everything was so tender and soft........seems like I am rolling!!!
The trick for the eggplant was to cook it in caramelized sugar to give it a sugary coat on both the sides. For this, I added olive oil and brown sugar and let the eggplant sit in it while flipping the sides until it was cooked. Next I sauteed garlic, onions, green pepper, mushrooms in soy sauce and kept it aside. After the eggplant was cooked, I added tomato puree to it and let the eggplant cook in the tomato puree. Lastly added the sauteed veggies as a top layer followed by parmesan cheese===Sunday Italian treat for my taste buds! slurp ;P
